Recipe from Finland’s Masterchef Kira

In my opinion, healthy everyday food doesn’t have to bee boring and tasteless. It’s actually possible to create something delicious with simple and familiar, everyday ingredients. And to get a five heart rating 🙂

This meal is one of my personal favorites to make after a long day at work. It’s quick and so simple to prepare. Sometimes the flavours change along the way, depending on the mood I am on that day. Some days it has an oriental flare to it and sometimes I don’t even bother to make the sauce. But it’s delicious every time no matter how you choose to make it.

The salmon and cauliflower cooks brilliantly together in the oven. You can even substitute the salmon with any other fish, just keep an eye on the cooking time, depending on how big your fillets are.

Roasted salmon with cauliflower & rice salad (for two)
1 dl brown basmati rice
400 g salmon, skin on and cut into two portions
1/2 lemon
1 cauliflower (aprox. 400 g)
2 tbsp olive oil
1 tbsp honey
1,5 tbsp small capers, rinsed
1,5 dl plain full fat greek yogurt
1 tbsp lemon zest
1,5 tsp lemon juice
3 tbsp chopped fresh dill

1. Prepare the rice according to package instructions
2. Pre-heat the oven to 220 C. Line 1/3 of a baking sheet with aluminium foil and lift the edge of the foil so it forms a pocket
3. Place the salmon on the foil, skin side down. Season with salt. Slice 1/2 lemon and place slices on top of salmon
4. Cut the cauliflower into bite size pieces, season with salt and 1 tbsp of the olive oil, place on the baking sheet, along side salmon
5. Roast for 13-14 minutes in the oven, until salmon is cooked but still pink and juicy in the center
6. Meanwhile, mix yogurt, 0,5 tbsp lemon zest, lemon juice and 0,5 tbsp honey in a small bowl. Season with salt and pepper
7. Take the baking sheet out of the oven and put broiler on high
8. Brush the salmon with the remaining honey, mix capers with cauliflower
9. Broil for about 2 minutes, until the salmon has a nice color
10. Mix the cauliflower with the cooked rice in a bowl. Season with the remaining lemon zest, olive oil and with some extra lemon juice. Mix in dill, check seasoning
11. Serve salmon with the cauliflower and rice salad and yogurt sauce
